Ingredients

For the Steak Marinade:

  • 300g rump steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 1 tsp grated fresh ginger
  • 1 tsp cornstarch

For the Stir-Fry:

  • 2 tbsp vegetable oil
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 small red onion, thinly sliced
  • 100g tenderstem broccoli
  • 100g shiitake mushrooms, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp grated fresh ginger

For the Sauce:

  • 2 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp honey
  • ½ tsp chili flakes (optional)
  • 2 tbsp water or beef stock

For Garnish:

  • Sesame seeds
  • Thinly sliced spring onions
  • Microgreens or edible flowers (optional, for plating)

Instructions

1. Prepare the Steak Marinade:

  • Combine soy sauce, oyster sauce, sesame oil, grated ginger, and cornstarch in a bowl.
  • Add the thinly sliced steak, mix well, and marinate for at least 30 minutes (or overnight for deeper flavour).

2. Prepare the Sauce:

  • In a small bowl, mix dark soy sauce, oyster sauce, rice vinegar, honey, chili flakes, and water or beef stock. Set aside.

3. Sear the Steak:

  • Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Sear the marinated steak slices in batches for 1-2 minutes until caramelized. Remove and set aside.

4. Stir-Fry the Vegetables:

  • Add the remaining 1 tbsp of oil to the wok. Add garlic and ginger, stir-frying until fragrant.
  • Add the red and yellow bell peppers, onion, broccoli, and mushrooms. Stir-fry for 3-4 minutes, ensuring the vegetables remain crisp-tender.

5. Combine and Glaze:

  • Return the seared steak to the wok. Pour in the prepared sauce and toss everything together, cooking for another 1-2 minutes until the sauce coats the ingredients beautifully.

6. Plating:

  • Arrange the steak and vegetables artfully on a plate, focusing on height and balance for presentation.
  • Drizzle any remaining sauce over the dish and garnish with sesame seeds, spring onions, and microgreens or edible flowers for a Michelin-style touch.
