- 1 red bell pepper, julienned
- 1 yellow bell pepper, julienned
- 1 small red onion, thinly sliced
- 100g tenderstem broccoli
- 100g shiitake mushrooms, thinly sliced
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
For the Sauce:
- 2 tbsp dark soy sauce
- 1 tbsp oyster sauce
- 1 tsp rice vinegar
- 1 tsp honey
- ½ tsp chili flakes (optional)
- 2 tbsp water or beef stock
For Garnish:
- Sesame seeds
- Thinly sliced spring onions
- Microgreens or edible flowers (optional, for plating)
Instructions
1. Prepare the Steak Marinade:
- Combine soy sauce, oyster sauce, sesame oil, grated ginger, and cornstarch in a bowl.
- Add the thinly sliced steak, mix well, and marinate for at least 30 minutes (or overnight for deeper flavour).
2. Prepare the Sauce:
- In a small bowl, mix dark soy sauce, oyster sauce, rice vinegar, honey, chili flakes, and water or beef stock. Set aside.
3. Sear the Steak:
- Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Sear the marinated steak slices in batches for 1-2 minutes until caramelized. Remove and set aside.
4. Stir-Fry the Vegetables:
- Add the remaining 1 tbsp of oil to the wok. Add garlic and ginger, stir-frying until fragrant.
- Add the red and yellow bell peppers, onion, broccoli, and mushrooms. Stir-fry for 3-4 minutes, ensuring the vegetables remain crisp-tender.
5. Combine and Glaze:
- Return the seared steak to the wok. Pour in the prepared sauce and toss everything together, cooking for another 1-2 minutes until the sauce coats the ingredients beautifully.
6. Plating:
- Arrange the steak and vegetables artfully on a plate, focusing on height and balance for presentation.
- Drizzle any remaining sauce over the dish and garnish with sesame seeds, spring onions, and microgreens or edible flowers for a Michelin-style touch.
