Fusion Flavours: Crispy Egg Fried Rice Cakes

Egg fried rice is a beloved classic, but what if we gave it a creative twist? These crispy egg fried rice cakes combine the savoury flavours of traditional fried rice with the satisfying crunch of a golden rice cake. Perfect as a unique appetizer or a fun main dish, this recipe is a showstopper for any meal. Let’s turn your fried rice into something extraordinary!

Ingredients

For the rice cakes:

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 eggs, beaten
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • ½ tsp garlic powder
  • ½ tsp ground black pepper
  • 2 tbsp chopped spring onions
  • 2 tbsp vegetable oil (for frying)

For the fried rice topping:

  • 1 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1 small carrot, finely diced
  • ½ cup frozen peas
  • 1 egg, beaten
  • 2 tbsp soy sauce
  • 1 tsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 2 tbsp chopped spring onions
  • Chili flakes for garnish (optional)

Instructions

  1. Prepare the rice mixture:

    • In a bowl, mix the cooked jasmine rice with beaten eggs, soy sauce, sesame oil, garlic powder, black pepper, and spring onions until well combined.
  2. Shape the rice cakes:

    • Using your hands or a mould, form the rice mixture into small, flat cakes (about 3 inches in diameter).
  3. Fry the rice cakes:

    • Heat vegetable oil in a non-stick skillet over medium heat. Fry the rice cakes for 3-4 minutes on each side, or until golden brown and crispy. Transfer to a plate lined with paper towels to drain excess oil.
  4. Make the fried rice topping:

    • In the same skillet, heat a tablespoon of vegetable oil. Add minced garlic and diced carrot, sautéing until softened.
    • Add the frozen peas and cook for another 2 minutes. Push the vegetables to one side of the skillet and pour in the beaten egg, scrambling it until fully cooked.
    • Mix the egg with the vegetables, then add soy sauce, oyster sauce (if using), and sesame oil. Stir well and remove from heat.
  5. Assemble the dish:

    • Place a crispy rice cake on a plate. Spoon a generous amount of the fried rice topping over the rice cake. Garnish with chopped spring onions and chili flakes, if desired.

Serving Suggestions

  • Serve with a side of sweet chili sauce or soy sauce for dipping.
  • Pair with a light cucumber salad or pickled vegetables for a refreshing contrast.
