Ingredients:

For the Spaghetti:

  • 400g spaghetti
  • 2 tbsp sesame oil
  • 3 garlic cloves, minced
  • 1 medium onion, finely chopped
  • 1/2 cup gochujang (Korean chili paste)
  • 2 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 cup kimchi, chopped
  • 200g ground beef or pork (optional)
  • 1/4 cup pasta water (reserved)
  • 1 green onion, sliced
  • Sesame seeds, for garnish

For the Cucumber Sesame Salad:

  • 2 cucumbers, thinly sliced
  • 1 tbsp salt (for salting cucumbers)
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp honey
  • 1 tsp soy sauce
  • 1 tbsp sesame seeds
  • 1/2 tsp red pepper flakes (optional)
  • 1 green onion, finely sliced

Instructions:

Prepare the Salad:

  1. Place cucumber slices in a bowl and sprinkle with salt. Let sit for 15 minutes to draw out excess moisture.
  2. Rinse the cucumbers and pat them dry with a clean towel.
  3. In a small bowl, whisk together rice vinegar, sesame oil, honey, soy sauce, sesame seeds, and red pepper flakes.
  4. Toss the cucumbers with the dressing and garnish with green onion. Chill in the refrigerator until ready to serve.

Prepare the Spaghetti:

  1. Cook spaghetti according to package instructions until al dente. Reserve 1/4 cup of pasta water before draining.
