Pork Steak With Hazelnut Crumb & Onion Rings and Peppercorn Sauce!



Pork steaks are good value and can be made into a quick and easy midweek dinner.
However today I have decided to add a few extras to make a dinner that’s a little bit special.

Onion Rings
Peas

Oven Roasted Vegetables
 This is so quick and easy to do! Simply peel your potatoes, parsnips and carrots. Cut the potatoes and into the size you want to serve, do the same with the parsnips and carrots. Cut the carrots slightly bigger than the potatoes as they will cook slightly quicker. Once prepared mix with some oil, salt and pepper. Place everything on a baking tray and throw it in the oven for an hour or so on about 180C.

Hazelnut Crumb Pork Steaks
Prepare the breadcrumbs by getting some bread and blitzing it to a fine crumb. I have some blitzed hazelnuts left over from a previous recipe so I am going to add these as well. To see that recipe click here.
Once you have mixed the breadcrumbs put them to one side and prepare the pork.
The pork needs to be bashed out to make it thinner, I would recommend ½ cm should do it, this will help the meat cook quicker. I use a food bag and a rolling pin to get rid of some frustration from the day and give those steak a good smack!
To make sure the breadcrumbs will stick to the meat you will need to prepare a bowl of flour and a bowl of whisks eggs.
Create a line of the bowls of flour, eggs and breadcrumbs and dip each steak in the flour, the egg and finally the breadcrumbs. After dipping into the four and the egg shake of any excess. When adding the breadcrumb crust pat the breadcrumbs down and make sure the meat is completely covered.
Keep any egg and flour you have left as these can also be used for the onion rings!
To cook the steaks heat a frying pan and cook the steaks, turn when golden and once golden on both sides put on an oven tray and place in the oven to finish off.

Peppercorn Sauce
 The pepper corn sauce add a fantastic flavour to the dish and is so simple to do! Finely chop a shallot (I had to use a bit of white onion as I didn’t have any shallots) and crush some garlic. Cook the onion on a low heat you don’t want to colour the onion just cook it through, once the onions are on the way add the garlic and cook through. Now add some brandy and set it alight (if you are brave enough) this will burn off the alcohol for you leaving you with a lovely flavour. Add some beef stock and some crushed peppercorns and allow to reduce, once you have a thickened sauce add some cream and keep warm.

Onion Rings
These onion rings are so crispy and so light. Simply cut an onion into rings. I would then dip them into milk and the flour however if you have any egg from the pork steaks you can use the egg and then the flour. Once the onions are coated add to a deep fat fryer and allow to cook! They will go very crispy and once brown take them out and job done!

 I found some mushrooms in the fridge so fried these off with some olive oil, salt and pepper!






I had some frozen peas so I cooked them up in the microwave and that its we are done!
