Friday Night Surprise Dinner



On Fridays I like nothing better than going to the supermarket, going to the fresh meat isle and look through the reduced price meat. This isn't because it's any better on a Friday or cheaper or because I need a cheap dinner. It's because I want to buy something that i might not normally buy and then have find what I have in the kitchen cupboards to compliment it to make a dinner worthy of Friday night! 

Tonight we have £8 worth of pork fillet picked up for £5. It's far too much for 2 people so I will freeze half of it and cook the rest to make a really yummy dinner.

Having hunted around I found the following, please note there are no measurements here, it's all about adding what you want in the quantity you want! It's your dish, so make it your own! 

Together with the pork fillet I have:
1 Red Pepper
1 Onion
2 Cloves of Garlic
Paprika
White Wine
1 Fresh Lemon
Double Cream 
Flour
Rice

To make something super delicious with the above ingredients I did the following. I believe preparation is the key here! Get the prep right and everything will fall into place nice and easy! 

Chop up the red pepper into strips, chop the onion into strips, finely chop the garlic. 

Next stick on a pan of salty water and add the rice leave to cook for the time stated on the packet - simple!

Slice the pork into rings, dont go too thin as the pork will dry out and cook really quick. You want a bit of juice in the meat. 

Mix up some flour in a bowl with the paprika, some salt and pepper. Pop the cut pork fillet into the spicy flour and coat all over. This will give the pork a nice crunchy outer coating, will protect the meat and help thicken the sauce. 

Now cook the pork in a frying pan on both sides until golden, do this on a reasonably hot heat as you want to sear the outside of the pork.Cook in batches so the pan doesnt lose too much heat and the meat gets a chance to fry. Once cooked put in a bowl for later. 

Once the pork is cooked add the onions and peppers to the frying pan and fry until soft, add the garlic and continue cooking until you can smell that lovely garlic smell - dont let it burn! It tastes very bitter when burnt so we don't want that. 

Now add the juice of a lemon and let cook for 30 seconds before adding a nice glass of white wine. As this reduces add the cream and combine to make a lovely creamy sauce. Add the pork into the sauce and bingo we have our pork fillet in white wine and cream sauce! 


Wait for the rice to finish cooking and the serve the rice with the pork on top! If the sauce gets too thick add more wine and or cream!
