Carrot & Ginger Soup


Its cold outside so it must be time to knock up some soup! I think soup is probably one of the easiest things to put together. Just grab some ingredients, throw em in the saucepan cook them, blend them and bingo we are good to go! 

This recipe is quick and easy and the taste of carrot and ginger is amazing! I also made some french bread whilst i was at it so I had something to dunk in the soup! Easy peasy! 


To make my carrot and ginger soup you will need 

2 Large carrots
1 Piece of ginger
1 Small onion
1 Clove of garlic 
300ml of water
Some parsely



Firstly peel the ingredients, finely chop the onion and get it sweating in a pan with a little olive oil. After a couple of minutes add the finely chopped garlic to the pan and fry off the garlic, don't let it burn! 

Now  chop the carrots and add the carrots to the pan. Slowly fry for 5 minutes, there is no rush, take your time just let that carrot sizzle for a bit! Now add the water, i also threw in a couple of chicken stock cubes i had made recently which had been frozen. Let the soup cook for 20 minutes just simmering. 



After 20 minutes throw the soup into a blender and blend until smooth. Pour the soup into a bowl and add some chopped parsley! There you go yummy carrot and ginger soup! 

Now I also made some french bread dough in the bread maker, it takes 3 1/2 hours! However once ready i made myself 2 small french bread baguettes


Placed in the oven for 20 minute son 160C and bingo nice crunchy bread to go with my tangy soup! 

Lunch today was pretty special, soup and fresh crunchy bread! 

Of course you can add what you like to the soup, maybe a bit of chilli, maybe some crunchy bacon. Whatever it is give it a go!
