After a Sunday roast there is nothing quite like using up the left overs! This week we had beef and that means I can do a quick cottage pie. The best bit is that we are using the left over roast beef not some mince! So there is a huge amount of flavour already available! Its just a matter of adding some bits and pieces and we are away!
To make this cottage pie you will need
Potatoes - quantity depends on how much pie you are planning to make!
Left over beef
Left over veg
1 Onion
Left over Gravy
1 Carrot
1 Tin of Tomatoes
Milk and Butter for the mash
Chop up the onion and carrot and get it frying on a medium heat, we just want to cook these for a few minutes and get some colour in there.
Peel and chop the potatoes and put in a saucepan with boiling water, add some salt to taste, leave to boil until soft.
Meanwhile cut up the meat and put it in a food processor. Switch the processor on and break down the meat. I like it quite fine so i keep it going for a good minute.
Once the frying veg has some colour add the meat, any left over chopped up veg and let it all combine for a few minutes.
Add the gravy and tin of tomatoes and let in simmer.
When the potatoes are ready add some milk and butter, lots of ground black pepper and mash away.
I like really smooth creamy mash with lots of pepper through it!
Pour the meat and veg into a oven proof bowl and add the mash on top. Throw it in the oven until the potato is crisp and golden!
It's now ready to be served with some extra veg, some pickled onions or just on its own!
