I love granola, it's often very expensive to buy in the shops and often full of sugar. This recipe is full of nuts oats and sweetened with honey and maple syrup.
I like to make a lot of this granola as i will eat it every day for breakfast but also pick at it during the day! It's probably one of the easiest recipes but also one of the tastiest!
The ingredients are simple and can be swapped in and out as well as nuts, seeds and oats i add some chewy bits as well at the end! Today i have some goja berries and some berries and cherries but raisins would work just as well!
Ingredients
300g Rolled Oats
100g Hazelnuts
100g Pecan nuts
50g sunflower seeds
50g Flax seeds
50g Chia seeds
50g Sesame seeds
250g Maple syrup
2 Tablespoons of honey
Start by roasting the hazelnuts and the pecan nuts in the oven on 150C for 10 minutes or until the hazelnuts just start to go golden. This gives the nuts a toasted flavour and an extra crunch, this really makes a difference!
Heat up the maple syrup and the honey in a pan, bring to the boil then turn the heat off.
Now put all of the dry ingredients in a bowl and add the nuts, now pour in the warm syrup mixture and stir everything together until it is all mixed up and all the dry ingredients are coated in the the syrup.
Line a baking tray or two with baking paper and then pour out the mixture onto the trays. You don't want things too thick so spread it all out if you need more trays then use them!
Bake in the over on 150C for 20 minutes, keep turning things over in the trays, you want to have the granola a nice golden colour so if a few more minutes are needed keep cooking!
Once cold add the fruit and mix everything up.
Once cooked take out to let cool and pour into a air tight container and there you go breakfast for the next week!
