Roast chicken is one of the best Sunday roasts out there and probably one of the most popular. We rarely manage to eat all of the chicken so rather than just have cold chicken sandwiches Monday night often ends up with some sort of left over chicken dish.
This week its left over roast chicken pasta! We like to use what is in the fridge so for this we used the following
The left over roast chicken
2 Peppers we had a yellow and red one in the fridge
2 Chillies - these are sweet mild bishops crown chillies that we grew in the garden, we aren't looking for heat just a sweet hit and tang! So don't go mad on the chilli!
2 Cloves of garlic finely chopped
1 Onion
2 Lemon
Left over chicken gravy or some chicken stock
75g Per person dry pasta
A couple of handfuls of frozen peas or any veg left from the roast!
Glug of white wine (optional)
Put on a pan of water and bring to the boil, add some salt and the pasta. Salt gives the pasta some flavour so don't miss this out!
We like quick and easy especially on a Monday night so simply dice the peppers and onions and get them sweating in a pan. Add the finely chopped garlic and allow to sizzle and cook through.
Once softened add the peas and add the juice of the lemon, you could also add a glug of white wine if you fancy something a bit naughty!
Once the juice of the lemon and if you included it, the wine have been incorporated add the chicken and the gravy/stock.
Let this simmer until the pasta is cooked. Once the pasta is cooked spoon 3 tablespoons of the pasta water into the chicken mix and then drain the pasta.
Add the pasta into the chicken mix and stir through so that the sauce covers all of the pasta.
Add some salt and pepper to taste and there you go!
The pasta is now ready to be eaten! I had some garlic bread in the freezer so i cooked that in the oven to add a bit of crunch to the dish!
This takes as long as it takes to boil pasta so takes no time, is super healthy and uses up those left overs!
If you have other veg available then use that! If you have some parsley add that at the end and if you feel very naughty add some cream before adding the pasta!
