Ingredients

For the chicken:

  • 1 whole chicken (approx. 1.5kg), cleaned and patted dry
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tbsp brown sugar
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • ½ tsp chili flakes (optional)

For the coconut lime sauce:

  • 1 can (400ml) coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp brown sugar
  • 1 garlic clove, minced
  • 1 small chili, finely sliced (optional)
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken:

    • In a bowl, mix olive oil, soy sauce, fish sauce, lime juice, brown sugar, garlic, ginger, coriander, cumin, and chili flakes.
    • Rub the marinade all over the chicken, ensuring it gets under the skin and into the cavity. Let it marinate in the refrigerator for at least 1 hour or overnight for maximum flavour.
  2. Roast the chicken:

    • Preheat your oven to 200°C (400°F). Place the marinated chicken on a roasting rack in a baking dish.
    • Roast for 1 hour to 1 hour 15 minutes, basting with the pan juices every 20 minutes, until the skin is golden and crispy and the internal temperature reaches 75°C (165°F).
  3. Prepare the coconut lime sauce:

    • In a saucepan, combine coconut milk, fish sauce, lime juice, brown sugar, garlic, and chili. Simmer over medium heat for 5-7 minutes, stirring occasionally, until slightly thickened.
  4. Serve:

    • Let the chicken rest for 10 minutes before carving. Serve with steamed jasmine rice, fresh vegetables, and a drizzle of the coconut lime sauce. Garnish with fresh cilantro.

Serving Suggestions

  • Pair with a crisp green salad and crusty bread.
  • Use leftovers in wraps or sandwiches with a slather of coconut lime sauce.
