Fusion Flavours: Soy-Glazed Pork Tenderloin with Spiced Apple Chutney
Introduction Pork tenderloin is a lean, versatile cut that easily absorbs bold flavours, making it a fantastic base for fusion recipes. In this dish, we pair juicy, soy-glazed pork tenderloin with the sweet and tangy notes of spiced apple chutney. The result? A harmonious blend of savoury, sweet, and spiced flavours that’s perfect for a dinner party or an indulgent family meal.
Ingredients
For the pork tenderloin:
- 1 pork tenderloin (approximately 500g)
- 3 tbsp soy sauce
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 garlic clove, minced
- 1 tsp grated fresh ginger
- ½ tsp ground black pepper
For the spiced apple chutney:
- 4 medium apples (e.g., Bramley or Gala), peeled, cored, and diced
- 1 medium red onion, finely chopped
- 150g brown sugar
- 120ml apple cider vinegar
- 1 tsp grated fresh ginger
- 1 tsp ground cinnamon
- ½ tsp ground cumin
- ¼ tsp chili powder (optional)
- ½ tsp salt
- 2 tbsp raisins or sultanas (optional)
Instructions
-
Marinate the pork:
- In a bowl, whisk together soy sauce, honey, sesame oil, garlic, ginger, and black pepper. Place the pork tenderloin in a resealable plastic bag and pour in the marinade. Seal the bag and refrigerate for at least 1 hour, or overnight for deeper flavor.
-
Prepare the chutney:
- Follow the instructions for the spiced apple chutney recipe above. Once prepared, set aside to cool.
-
Cook the pork:
- Preheat your oven to 200°C (400°F). Heat a skillet over medium-high heat and sear the pork tenderloin on all sides until browned (about 2-3 minutes per side).
- Transfer the pork to a baking dish and pour the remaining marinade over it. Roast in the oven for 15-20 minutes, or until the internal temperature reaches 63°C (145°F). Let rest for 5 minutes before slicing.
-
Assemble and serve:
- Slice the pork tenderloin into medallions and arrange on a serving platter. Spoon the spiced apple chutney over the pork or serve on the side as a condiment.
Serving Suggestions
- Pair with a side of roasted root vegetables or steamed green beans.
- Serve over a bed of fluffy mashed potatoes or jasmine rice.
